Does rank stats really help?

Does a level 20 S rank stats monster have a higher stat than a level 20 C rank stat monster?
Does this mean that I need to create a level 1 S rank and train it from level 1 to get a higher stat than train a level 30 S rank?
I mean like if both the monster reaches level 31 the level 1 S rank will get a higher stat or not?

Level and rank are completely different. Doesn't matter when you rank up your monster to S. You can do it at lvl 1 or lvl 50. The end stats of the monster will be the same regardless

Yep. Basically add (31/50 x current level) if it's S grade to the E- stat
