What to raise after 100 speed?

I'm curious what I should raise after 100 speed. Attack defense or fortune and why?

Also what skills should I raise and to what level?

i recommend reading this and then make a decision according too your army type and playing style

What you focus on after speed is entirely up to the type of army that you're running.
Are you a baiter? Or are you a dropper and always on the offensive?
Do you want to take out players with bigger and better armies than you, or do you harass the youngsters?
Are you active enough to be replenishing troops or do you want the type of army that doesn't need touching up?

As Nathan posted, that will give you some good insight into what type of skills and attributes you want to use as both will depend highly on your playing style and army make up.

Actually, I would like to suggest Attack in specific. Uranos has made a guide on this, how Attack is far more effective at level 100 then Defence is. Fortune is plain luck, and so I'd decide between a guarantee of heavy hits (Attack) and a rather small chance of super heavy hits (Fortune).

If you have a cav army then max defense helps as you need to absorb hits from cats at times. A high defense will help ensure that enough of your cavs survive to make an impact when they do make contact.
