I call a large army as least 400k crop consumption, only had 1 large army in my life, based on my definition :P

Archers, in terms of attack and crop consumption, are in a 5:1 ratio with cats, ie 10k archers = 2k cats. They lack in defense, though, so if you are considering combining archers with other troops, try to use meatshields so your archers don't have to take direct attacks.

As for cav/arch, I know archers can be used to clear blockers the cavs might otherwise run into, and to provide additional power when going in for the final kill. You can also run them behind cavs to take out turrets (but you need a large # for that, or else the turrets' counterattacks will kill some of ur archers).

Well afaik def doesnt matter that much. What matters is heal in this case 5*125=625

cavs and archers are not best at all battles though...
